Haute de France covering Nord Pas de Calais
and Picardie and Île-de-France region occupy largely flat plains and lowlands criss crossed by numerous navigable rivers and canals. Climate is temperate with warm summers and cold winters, with signifcant annual rainfall and high humidity providing fertile growing conditions. Haute de France is the nation's second largest brewer and distiller and well known for livestock, dairy, fruit and vegetable farming with a major fishing industry.

Menus owe much to the Flemish influence to the north and its own stretch of coastline. Expect to be greeted with a variety of fish dishes, beer marinated meat stews and delicous fruit tarts. The area's strong brewing and distilling heritage means a good variety of beers, liqueurs and spirits to elevate any dish.
